At the Highlands Bar & Grill, renown Chef Frank Stitt combines the simple elegance of country French cuisine with rich Southern tradition to create a unique dining experience. The menu features such delicacies as grilled and braised duck, roast quail, fried Apalachicola oysters, and honeysuckle ice cream with pistachio butter cookies. The award-winning wine list includes an extensive selection of international and domestic wines covering a wide price range. Stitt, the 2001 James Beard Award winner for "Best Chef of the Southeast" and a four time nominee, is a protégé of Alice Waters (Chez Panisse, San Francisco). He also studied in Greece, Italy, and Spain under such world renown chefs as Richard Olney and Simca Beck. In 2001, Gourmet magazine named Highlan#5 restaurant in the country.
